PREPARATION
Boil 7 potatoes in salted water for approx. 20 minutes. Drain the potatoes and mash them or press them through a ricer and (important) leave them to cool. Grate 4 raw potatoes. Add the flour, egg, nutmeg and salt, and knead the dough well. Form 16 dumplings weighing 45 g each and place them in boiling salted water. Cook the dumplings until they rise to the surface, then remove them with a ladle.
- It is best to cook the potatoes 6 hours in advance and allow to cool.
