PREPARATION

Cook the pasta in salted water. Drain and leave to cool. Wash the plum tomatoes and cut them in half. Finely dice the dried tomatoes. Wash the rocket and tear it into bite-sized pieces. Slice the olives. Toast the pine nuts in a pan without oil. Peel the shallots, halve them and slice them thinly. Prepare a dressing from the vinegar, salt, sugar, olive oil and shallots. Mix all the ingredients (except the rocket) together well. Leave the salad to stand for at least 6 hours.
