PREPARATION

Peel and finely dice the onions. Halve the tomatoes and peppers, remove the seeds and dice into small pieces.
Heat the olive oil in a non-stick frying pan and fry the onions. Add the peppers and tomatoes and fry for approx. 5 minutes. Beat the eggs and add to the vegetables. Season to taste with salt, paprika, chilli flakes and pepper. Garnish with flat-leaf parsley.
