PREPARATION
Cook the kritharaki in salted water for approx. 13 minutes. Drain and leave to cool. Quarter the cucumbers and cut into thin slices. Halve the peppers, remove the seeds and dice finely. Peel the shallots, halve and cut into thin slices. Halve the tomatoes and olives. Finely chop the parsley. Prepare a dressing from the tomato purée, honey, garlic, lemon juice, olive oil, salt and pepper. Peel and crush the garlic. Mix all the ingredients together well. Leave the salad to stand for at least 6 hours.
