PREPARATION
Peel the shallot and cut into thin rings. Cut the dates into eighths. Mix the shallot and dates with vinegar and leave to stand for 15 minutes. Then pour off the liquid that has been released. Mix the sumac, chilli flakes and salt in a small bowl. Roast the almonds in a pan without fat. Bake the wraps in a pan without fat until crispy and tear into bite-sized pieces. Mix the spinach and all the other ingredients in a large bowl and season with lemon juice, olive oil and salt.
- Instead of a multigrain wrap, pita bread can also be used.
