PREPARATION
Pour hot water over the noodles, leave to stand for approx. 5 minutes and then drain well. Season the drained noodles with soy sauce, sweet chilli sauce, sesame oil, salt and pepper. Heat 1 tbsp rapeseed oil in a non-stick frying pan, briefly fry the egg, beaten with salt and pepper, on both sides, leave to cool and then cut into strips. Peel the onion, garlic and carrots. Finely dice the onion and garlic. Cut the carrots and white cabbage into thin strips. Cut the leek into thin slices. Heat the remaining rapeseed oil in a pan and fry the onions and garlic until golden brown. Add the noodles over a medium heat and fry for 3 minutes. Add the vegetables and fry for approx. 6 minutes, season with salt and pepper to taste. Serve with the sliced eggs.
- Instead of white cabbage, you can also use pointed cabbage.
