PREPARATION
Cook the rice according to the instructions on the packet. Cook the edamame in the microwave or briefly in a saucepan. Cut the nori sheet into fine strips. Peel the carrots, halve the cucumber and avocado. Remove the avocado flesh from the skin. Cut the vegetables into bite-sized strips and arrange in a bowl. For the dressing, mix together the soy sauce, honey, lime juice and sesame oil.
- Instead of lime juice, you can also use lemon juice.
