PREPARATION
Bring the water to the boil, add the couscous and salt, stir briefly and leave to stand. Halve the tomatoes and cucumbers, remove the seeds and dice into small cubes. Finely chop the parsley and mint leaves. Make a dressing from the tomato purée, lemon juice, olive oil, salt, pepper and sumac. Mix all the ingredients together well. Leave the salad to stand for at least 6 hours.
- 1 teaspoon of chilli gives the couscous salad a pleasant spiciness.
